A new SCOBY layer forms in almost every batch, but it often stays fused to the old one instead of peeling off as a separate disc. That’s not a mistake - it depends on how the old SCOBY floats and how much of the surface it covers. If your kombucha keeps fermenting well, there’s nothing here that needs fixing.
People expecting “a second SCOBY” usually have social media photos in mind: a new, thin, pale disc that peels away easily from the one underneath.
Yours just gets thicker instead. Batch after batch, always one, always a bit more solid.

01 — What “duplicating” actually means
Why your SCOBY isn’t duplicating: the new layer doesn’t form separately
Every time you ferment, the bacteria living in the liquid produce cellulose where the liquid meets the air. That cellulose is a new SCOBY taking shape, layer by layer, from the start of fermentation to the end.
The catch is that this new layer doesn’t form on its own. It forms attached to whatever is already occupying the surface - the old SCOBY included. If the old SCOBY floats and covers the whole surface, the new layer grows right on top of it and fuses with it. The result is one thicker SCOBY, not two.
02 — Why it often stays as one

A separate second disc forms more often when the old SCOBY sinks instead of floating, leaving the surface free for a new layer to grow on its own. Or when the jar is wide and shallow, so the old SCOBY can’t cover the whole surface, and the new layer forms in the uncovered part.
In most ordinary cases, though, the old SCOBY stays on the surface, covers everything, and the new layer grows fused on top. It gets a little thicker with every batch. After a few months it can reach 2-3cm, and that’s entirely normal.
A few other things change how visible the split between layers is:
- Jar shape. The wider it is relative to the amount of liquid, the more free surface there is for an independent new layer.
- How active the fermentation is. A young, very active SCOBY produces cellulose faster, and that sometimes creates a layer that separates more easily from the one underneath.
- Moving the jar during fermentation. Even a small shift can temporarily slide the old SCOBY out of place, leaving room for a new layer to grow apart from it.
None of these are mistakes to fix. They’re just variables that decide whether the result looks like one thick layer or two thin ones.
03 — When it’s actually worth worrying

What matters is how the fermentation behaves overall.
Real reasons to look closer: the pH isn’t dropping the way it used to, fermentation is taking much longer than usual, or the SCOBY has patches turning soft or crumbly instead of staying solid. 04 — If you still want to split off a new SCOBY
How to split off a new SCOBY if it won’t duplicate on its own: two ways to do it
If you want a second SCOBY anyway, to give away or to start a second jar, you can encourage the split by using a wider jar for the next batch: the old SCOBY covers less surface and leaves more room for an independent layer.
A more direct route: with a clean knife, slice the thick SCOBY horizontally into two layers. Even if they didn’t form as separate discs, they can usually be split by hand along the growth lines. Each half keeps working as its own SCOBY in the next batch.

Frequently asked questions about a SCOBY that isn’t duplicating
Is it a problem if a SCOBY that isn’t duplicating gets too thick?
No. A thick SCOBY ferments just as well as a thin one. If it’s taking up too much space in the jar, you can remove the oldest layers from underneath, which are usually the least active anyway.
Can I cut a thick SCOBY while it’s still in the jar?
Better not to. Take it out, set it on a clean plate, cut it, and put it back. Working inside the liquid risks introducing contamination.
Why did my very first homemade SCOBY split immediately, and none since?
It could come down to the shape of the jar you used the first time, or the fact that the first SCOBY was thinner and floated differently. It’s not a sign that anything’s gone wrong since.
Should I worry if the SCOBY sinks instead of floating, when it isn’t duplicating?
No, that’s normal, especially in the first few days. Sinking, rising, sitting halfway: position alone doesn’t tell you whether fermentation is going well or badly.
